Caramel Apple Overnight Oats

Caramel covered apples / fall leaves crunching underneath / your foot / as it walks searching for a pumpkin / in the patch / filled with children / apple cider at the finish

The above describes my childhood autumns spent in Oregon. In Austin, there is no fall, just sun-drenched days and highs of 90s. Iced pumpkin spice latte anyone?

This cold breakfast is perfect for the still steamy days of October in Texas (and a perfect quick breakfast for anywhere else.) The sweet tastes of caramel and apple will remind you it is fall, even if it's still bikini weather. Loaded with fiber and protein, this breakfast also treats you with a spoonful of decadent caramel. (I have decided that caramel makes everything better.)

Caramel Apple Overnight Oats

Ingredients

  • 1/4 cup whole oats (I like Bob's Red Mill Gluten-Free Oats)
  • 1/2 a container of Chobani Caramel Apple Blended Greek Yogurt 5.3oz size (can sub plain Greek yogurt too) but you can easily find this flavor at most Targets
  • 1/2 Granny Smith apple, diced
  • 1 Tbs. caramel sauce (I recommend a high quality sauce, I love Somebody's Mother's Caramel Sauce)
  • 1/2 cup unsweetened almond milk
  • 1 tsp. chia seeds
  • 1 Tbs. pomegranate arils

Mix all ingredients together in a mason jar and store in fridge for an hour or overnight. You can also add the caramel sauce right before you eat the oats. Warm the caramel up in the microwave for 15 seconds then drizzle over the oats.

Optional additions: 1 Tbs. craisins, 1 Tbs. walnuts, 1 scoop vanilla protein powder
