Sweet Potato Snack
Here's a quick snack packed with complex carbs and healthy fats that will satisfy your sweet tooth. It's easy to meal prep multiple servings, stores well in the fridge and is a satisfying afternoon snack!
- Sweet Potato
- Cashew Butter (or any nut butter - almond, peanut, sunflower seed)
Preheat oven to 350F and roast pierced sweet potatoes for 60-75 minutes until soft. (You can also zap in the microwave for 5 minutes.) Let cool for 5-10 minutes, then slice in half.
Top with a a dollop of nut butter and a sprinkle of cinnamon.
