Fresh Shrimp Tacos
I love shrimp tacos sooooooo much. Usually my go to is corn tortillas and avocado, but today I mixed it up with whole wheat torts and crunchy toppings. These were delish.
- 10-12 shrimp, tails off, deveined, thawed and patted dry
- 1 tsp avocado oil
- Trader Joe's Chile Lime Seasoning
- 2 Ezekiel whole wheat tortillas
- Handful of sprouts
- 2 radishes sliced
- 1/2 small avocado sliced
- 4 Tbs. salsa
Heat oil over medium heat. Add shrimp and sprinkle with seasoning. Mix around and cook until pink. Remove to a plate. Heat tortillas 20 seconds per side until softened. Place sprouts, shrimp, sliced avocado, salsa and radishes on top and eat immediately. Nom nom nom.
