Quinoa Breakfast Bowl
- 120g cooked quinoa
- 2 eggs fried (can sub tofu)
- 2 slices bacon cooked (can sub vegan bacon)
- 1 Tbs. sundried tomatoes (I like Trader Joe's brand)
- 1 Tbs. shredded cheese (using Italian blend here)
Place quinoa in a bowl and top with eggs, chopped cooked bacon, tomatoes and cheese. Sprinkle with a bit of salt and pepper if desired.
