Quinoa Breakfast Bowl

Ingredients

  • 120g cooked quinoa
  • 2 eggs fried (can sub tofu)
  • 2 slices bacon cooked (can sub vegan bacon)
  • 1 Tbs. sundried tomatoes (I like Trader Joe's brand)
  • 1 Tbs. shredded cheese (using Italian blend here)

Place quinoa in a bowl and top with eggs, chopped cooked bacon, tomatoes and cheese. Sprinkle with a bit of salt and pepper if desired.
