Tofu Quinoa Bowl
I love a simple bowl with tofu, grain, veggies and a topping. Here I'm showing how to whip up a super simple, affordable and vegan dinner. Easy to meal prep and reheats well.
- 4-6 ounces extra firm tofu
- 1/2 - 1 cup cooked quinoa
- 1 tsp. olive oil
- 1-2 cups shredded lettuce
- 1/4 salsa
- Optional: 1 guacamole pack, extra veggies of your choosing
Start by unwrapping tofu, draining any liquid out, rinsing with a bit of water and patting dry. Slice tofu into little rectangles and place on paper or cloth towels. Fold towels over and press liquid out. Let sit for 10-15 minutes.
Meanwhile cook quinoa (1 cup quinoa to 2 cups water). Can cook in veggie or chicken broth for extra flavor.
You can season your tofu with anything you desire - tamari, nutritional yeast, salt and pepper, chile lime seasoning - it takes on any flavor. Crumble or slice tofu into little blocks and mix with seasoning.
Heat oil in pan over medium heat. Add tofu and cook until golden brown on all sides. Assemble bowl with cooked quinoa, tofu, shredded lettuce, veggies and salsa.
