Cauliflower Chicken Fried Rice

Who else binges on Chinese food? Yep, me too. Today I'm sharing a simple, super quick and delicious "Fried Rice" recipe that I hope you love. It is satisfying all my cravings but doesn't leave me with a bellyache and bloat. It's so fresh and crunchy!

Cauliflower Chicken Fried Rice

Ingredients

  • 4 oz diced chicken breast
  • 2 Tbs. Tamari or soy sauce
  • 1 tsp. grated fresh ginger
  • 1 clove garlic grated
  • 1 sliced green onion
  • 1 cup snow peas, ends trimmed
  • 1 cup mung bean sprouts
  • 1 cup chopped bok choy
  • 2 cups riced cauliflower
  • 1 egg
  • Coconut cooking spray

Directions

Marinate chicken in soy sauce, ginger and garlic. Can leave overnight or let sit for 10 minutes before cooking. Heat pan over medium heat. Coat with cooking spray. Add chicken and sliced green onion and cook on both sides until down. Remove to a plate.

Add all veggies except cauliflower to pan and cook for 5 minutes until soft. Remove to plate with chicken. Add cauliflower rice to pan and create space to add egg. Crack egg into pan and let cook partially, then break it up and mix with cauliflower rice until fully cooked. Add veggies and chicken back in, stir and heat for 1-2 minutes. Serve immediately.
