Spaghetti Squash Pasta
Spaghetti squash pasta dishes are perfect when balancing carbs. They have a low glycemic-load and the mild flavor goes well with many ingredients. Prep your squash beforehand for easy meals.
- 200g cooked spaghetti squash
- 2 Tbs. shredded cheese
- 16 oz ground turkey (93/7)
- 1.5 cups marinara
- 4 cups fresh spinach
- Herbs - dried basil, oregano, thyme, garlic powder, onion powder, salt and pepper
Heat a large saucepan over medium heat and brown turkey. Add spices to taste (I just shake a bit of everything in the pan - measuring not needed!) Once turkey is mostly cooked, add marinara sauce, stir, lower heat and simmer covered for 10-15 minutes. Add fresh spinach and cover. After a few minutes stir spinach down into sauce.
Plate 200g spaghetti squash, top with 1/4 sauce and sprinkle with optional 2 Tbs. Italian or Parmesan cheese.
