Dates + pecans + chocolate? Yes please. A candy that has no added sugars, is sweetened by the natural sugars in the dates and stevia dark chocolate, sign me up.
I had to try these after my client recommended them to me. Wow. Not only are they incredibly delicious but soooo easy to make requiring only three ingredients.
- 10-12 dates
- 10-12 whole pecans or pieces
- 1/2 bar of Lily's Dark Chocolate Premium Baking Bar
Heat a saucepan half full of water over medium heat. Place a heatproof glass bowl over water bath. Add chocolate to bowl and allow to slowly melt over water bath.
Meanwhile pit dates. Take 1 pecan and place it in center of date where pit was and close date around it. Set aside.
Once chocolate has softened, stir until creamy and remove from heat. Dip date in chocolate until covered (can use a toothpick to move date around in chocolate.) Remove to parchment paper lined plate or use paper plate. Let cool. Can set in freezer for 10 minutes to harden chocolate.
Store at room temperature. Try not to eat all of them the first day.
