Confession, kinda, sorta totally obsessed with avocado toast. To me, it is the perfect breakfast especially topped with eggs and sea salt. Simple, satisfying, nutritious - my kinda breakfast. Variations are endless, it's affordable, quick to prepare yet feels decadent and luxurious for a breakfast (because of all those delicious fats!)
Avocado toast is perfect for a LOW DAY breakfast for my clients. And you can eat it on HIGH and MEDIUM days if you are willing to go lighter on your fats later in the day. I'm willing to make that kind of sacrifice for my avocado toast. What can I say? I'm selfless like that. ;)
Avocado Toast with Jammy Egg
- 2 pieces Ezekiel Bread
- 50g avocado
- 1-2 jammy eggs
- 1-2 Tbs. tomatillo salsa
To make a "jammy egg", bring a pot of water to a roiling boil. Add eggs and set timer for 6:30. Meanwhile, fill a bowl with cold water and ice cubes. When timer goes off, drain boiling water off, and add eggs only to ice bath and let sit for 1-2 minutes. Toast your bread, mash up the avocado onto it. Remove your eggs and peel shell off. Cut into half and top your toast. Add a bit of your favorite salsa.
Get creative with your toppings.
The mild flavor of avocado can handle sweet and savory. Try fresh strawberries and basil. Or radish slices and cilantro. I also love some nutritional yeast sprinkled on top for a protein boost. Hot sauce, smoked salmon, thick tomato slices and basil, the combinations are endless.
Gettin' eggy with it
Avo toast can handle all variations of eggs - fried, sunny side up, scrambled, poached, hard-boiled, jammy, egg whites. The bread will soak up any runny yolk but the softness of the avo will help with any hard cooked eggs.
