Chocolate Strawberry Protein Pancake
Decadent, simple, delicious and no added sugars - this pancake looks like something you should eat on Valentine's Day...or anytime you have a craving for chocolate and sweets!
- 1 scoop plant based chocolate protein powder (I used Vega Chocolate)
- 1/2 banana
- 1/4 cup egg whites
- 1 Tbs. Lily's Dark Chocolate Chips
- Dash of creamer or almond milk
- 4-5 strawberries sliced
Blend all ingredients except chocolate chips and strawberries until smooth. Heat a pan over medium heat for a few minutes. Slightly lower heat on pan and spray with non-stick cooking spray (I like coconut oil spray). Pour batter in. Sprinkle half the chocolate chips into batter. Let cook without disturbing pancake until bubbles form on surface of pancake.
Flip pancake when edges are firm. Cook for 2-3 more minutes and remove pancake to plate. Immediately sprinkle remaining chocolate chips on top and add sliced strawberries.
