Chocolate Chip Cookie Dough Bites
Quick snacks that are easy to prepare, eat and have no added sugar can be hard to come by. Most prepared bars and snacks have added sugars because we are addicted to that sweet taste! These Chocolate Chips Cookie Dough Bites have healthy fats, fiber, carbs, a hint of sweet and take minutes to prepare.
Perfect for throwing in your kids' lunch bags (and your own), bringing on the airplane or in the car for an end-of-summer trip or for a quick dessert or afternoon pick me up with coffee.
If you want your bites a bit sweeter you can of course add a little honey to these but I prefer the low-sugar version. I recommend using Lily's Dark Chocolate Chips which are stevia-sweetened. These treats satisfy my craving for cookie dough and would be delicious on top of some vanilla yogurt, fro-yo or ice cream.
- 3/8 cup nut butter (creamy peanut butter, cashew butter or almond butter)
- 1/2 cup Bob's Red Mill oat flour (gluten-free)
- 1/4 cup Lily's Dark Chocolate Chips
- Splash of almond milk (only use if nut butter is dry to help mixing, otherwise leave out)
- Cinnamon (to taste 1/8-1/4 tsp)
- Vanilla extract (to taste 1/4-1/2 tsp)
- 2-4 Stevia drops (optional)
- Honey (optional)
Add nut butter, oat flour, and chocolate chips to a bowl. Mix well until batter holds together. It shouldn't be wet, but should form into balls easily and not crumble. If the batter is too dry, add just a splash of milk or water in order to mix. Add cinnamon and a splash of vanilla.
If you prefer a sweeter option, add 1 Tbs of honey to your mixture as well. For a sugar-free option, use 2-4 stevia drops.
Line a plate or baking pan with parchment paper. Scoop 2 tsp of batter and roll in your palms until a ball forms. Set onto pan. You can roll into crushed peanuts, unsweetened shredded coconut or cocoa powder. Continue making all of the bites.
Store your bites in the fridge or freezer. Separate layers with parchment paper to avoid sticking.
Store up to 10 days in fridge and 3 months in freezer.
