Tuna Avocado Salad
Need a high-protein, delicious, quick to prepare lunch?
Try this Tuna Avocado Salad. It uses avocado and Greek yogurt instead of mayo to get a deliciously creamy texture. You can serve it on toasted bread with lettuce and tomato or top a salad with it.
- 1 can tuna
- 1 small to medium avocado (or half a large one)
- 1/4 cup nonfat plain Greek yogurt
- 1/2 lemon juiced
- Salt and pepper to taste
Drain tuna. Add to bowl with avocado and yogurt and mix until texture is smooth. Add in lemon juice and salt and pepper to taste. Serve on toasted bread, in a wrap or on top of a salad.
