Summertime in Texas means it's HOT everyday and night. Which means margaritas. I love these watermelon margaritas because you can serve it as a refreshing mocktail for those abstaining or top with tequila for a pretty, delicious drink.
Margaritas are usually loaded with sugars but these are sweetened only by the watermelon. No added sugars = fresher flavor and better for your bod.
Super simple to whip up either using a blender or a juicer. You can play around with the flavors - jalapeno, lime, basil and strawberry all play well together in this drink.
- 3/4 of a big fresh watermelon, cut into chunks
- 3-4 limes, juiced
- 1 cup fresh basil leaves
- Optional: jalapeno, strawberries
- Chili lime salt
Set out a large pitcher for your margaritas. As you blend batches of the watermelon, pour into your container.
Start by blending the watermelon in your blender or you can use a juicer. If you are blending it, pour the watermelon juice through a sieve to reduce the amount of pulp in the finished product.
Blend 1 cup of basil with a batch of watermelon and add to your container. Juice 3-4 limes and add fresh lime juice to pitcher. If you like your margaritas spicy, blend 1/2 of a seeded jalapeno pepper with watermelon and add to jar.
Continue on until all the watermelon is blended. You can choose to add tequila to this mixture or keep it separate.
Salt the rims of glasses with chili lime salt, pour watermelon & tequila over ice, garnish with a chunk of watermelon rind or a lime wedge.
